VINEYARDS: The grapes for our Sauvignon Blanc are grown at our estate vineyard located in Aquebogue. The Palmer vineyard contains sandy-loan soil, which when combined with this ideal climate, produces grapes of intesely perfumed varietal character.
VINTAGE: The cool spring caused a late budbreak and a long period of flowering and set. This resulted in a very low crop, which ripened slowly over a cool summer. Warm afternoons followed by cold nights allowed the Sauvignon Blanc to ripen while retaining its varietal character and intensity.
WINEMAKING: After hand harvesting in the cool early morning, the fruit was crushed and pressed. No skin contact. The juice was fermented cold (52F) in Stainless Steel using an aromatic yeast strain to maxamize the vibrant varietal character of the Sauvignon Blanc. The wine was kept cold in a full stainless steel tank to preserve the delicate flavors before bottling in June.
WINEMAKERS NOTES: The 2007 Sauvignon Blanc is pale straw in color and shows classical varietal characterisitics of citrus, green apple with notes of mineral and lemon peel in the background. On the palate, this wine is clean with honeydew melon with a good fruit weight and intensity.
